Fruit Tart


Fruit Tart



This recipe is from The Roof pg. 104.   I was nervous to try the tart, but it worked out and was a real crowd pleaser.  I made my husband and his co-workers be my beta testers for the first one. Since it turn out so well I made it for my husband’s sister-in-law baby shower.


Ingredients for Crust:

½ cup butter (Softened)
½ cup sugar
1 egg
1 egg yolk
½ tsp. vanilla extract
1 TBSP heavy cream
2 Cups all-purpose flour
¼ cup semi-sweet chocolate chips
Kiwis, blueberries, strawberries, and mandarin oranges.

Directions for Crust:

In a mixing bowl, combine butter, sugar and then add egg, egg yolk, vanilla extract, and cream.  Mix together and beat until smooth.  Add flour and mix well.  Roll dough and put into well-greased 9 in.  fluted pan. Bake at 350 for 16 minutes.   Let the crust cool for about 30 minutes. While the crust is cooling melt the chocolate in either a double boiler or the microwave.  Once the crusted is cooled removed to wire rack and put the melted chocolate on the bottom of crusted let it cool.

Ingredients for Pastry Cream:

½ cup granulated sugar
1 TBPS Cornstarch
1 Cup whole milk
2 Egg yolks (beaten)
1 TBPS butter
½ tsp. Vanilla extract

Directions for Pastry cream:

Mix sugar, cornstarch, and milk together in a heavy saucepan over medium-high heat until sugar is dissolved, stirring continually and then bring to boil and cook for about 2 minutes until it becomes thick and clear.  To prevent cooking the eggs mix the egg yolks with a small amount of hot mixture (I used abut 2 TBPS) then combine both mixtures together. Bring again to a boil, stirring continually. Remove from heat and add vanilla and butter let it cool.  Once cool spread the cream on top of the chocolate then garnish with fruit and berries.

In trying to expand my sewing abilities I picked up See & Sew pattern #B5741.  It’s a bag pattern that I thought would be a great diaper bag.  I made one for my husband’s sister-in-law it went over so well I’ve had request to make more.  If you are interest in buying one I would be glad to create a bag for you. I’m selling the bags, but the cost will depend on how much the material is. 



Chicken Noodle Soup


Chicken Noodle Soup


I got this recipe from Swansonbroth.com, its easy and quick for those cold winter nights.


Ingredients:

1 ½ Cup of Carrots
1 ½ Cup of Celery
32 oz. of Chicken broth
14-½ oz. can of Chicken broth (if needed)
I cooked chicken breast
¼ Teaspoon of black pepper
Dash of basil
4 Cups of wide egg noodles


Directions:

 Boil Chicken breast for 45 minutes to 1 hour. Cut veggies into bites size pieces. Cut or shred the chicken and set aside.  Boil noodles and veggies together for about 10 minutes till soft.  Drain noodles and veggies. In your Dutch oven pan add chicken, noodles and veggies together.  Pour chicken broth add the can of broth if you feel you need more. Also add pepper and enough basil for taste.  Let the soup simmer for about 20 minutes and enjoy.

Oreo Cookies

I got this recipe from my Snow College roommate. Thank you Jenny!! The Oreos are really good and easy to make. They won’t last long.

Ingredients for Cookie:

2 Devils Food cakes mix
4 eggs
1 ½ Cup Shortening

Directions:

Mix cake mix, eggs and shortening together.  It’s thick so it will take a bit to mix all together. Roll into small balls. Bake at 350 for 10 to 12 minutes. 

Ingredients for Frosting:
1 Package of cream cheese (8oz)
¼ C. butter
1 lb. powered sugar (4 Cups)
2 tsp. vanilla

Directions:
Combined and mix all ingredients together. It makes take bit for the ingredients to combined and become smooth.

Once all the cookies are done baking you can start frosting, by putting two cookies together.  And enjoy.
